This vegetable pie is a typical italian dish, which is amazing as confort but healty food. You can use lots of different vegetables but this combination is absolutely the best (and quickest) one to make.
This recipe will create enough stuffed to fill a medium baking tray; I usually cut the pie in slices and separately freeze them to have a quick meal whenever I need.
600 gr. courgettes
250 gr. spinach
150 gr. leeks
cheese (Parmigiano or ricotta cheese would be the best choice)
1 Heat oven to 200C.
2 Once you've washed and cut the vegetable put them inside a frying pan with a tbsp of olive oil. Let them cook for 15/20 min being careful not to dry them too much. You can add salt, spices or onions to flavour. Once everything will be cooked let it cool down.
3 Mix the egg with cheese in a bowl and add the cooked vegetables. Mix all the ingredients until a homogeneous mixture is obtained.
4 Brush the baking try with oil or butter to avoid burning and roll out the puff pastry in it. Pour the vegetables into the puff pastry shell and fold the excess up to cover the filling.
5 Bake in preheated oven at 200 degree for 40 min.
