Time to level up your lazy sunday morning breakfast with these light and fluffy eggs. All you will have to do for these delicious eggs is a bit of whisking and straight forward assembling. This is a simple french recipe, and if you want to keep along with the french theme, you could use Gruyere cheese instead of Cheddar, which gives the eggs an even nicer flavour. (Recipe serves 1).
The previous recipes in this series:
-Grated handful of a hard cheese such as Cheddar
-1 Bagel (Or an English Muffin, toast, etc)
-Pinch of Salt
-Pinch of Pepper
-Butter to spread on the Bagel (Optional)
Begin by turning the grill on to a medium to high heat.
Separate the egg whites into a large bowl from the egg yolks. Be careful not to pierce the yolks. Keep the yolks in a bowl on the side for later.
Whisk the egg whites until they form stiff peaks (this should take about 8 minutes or so). Fold the grated cheese, salt and pepper into the whites (Not for too long or the air will come out of the egg whites).
Onto a tray lined with baking paper, arrange the egg whites into two little nest shapes, with a small dip in the middle. Bake under the grill for five minutes.
After five minutes, remove them from the grill and add a yolk to each nest.
Return them to the grill for another 3-5 minutes depending on how runny you like your egg yolks.
While the eggs cook for the last few minutes, cut in half, toast and butter your bagel. When the Nest Eggs are done, put one on each side of the bagel and as the French say, Voila! You have Next Eggs! Enjoy. :)
