These Fish Tacos with Guacamole are a perfect meal to put together on your first night in London. They don't involve many pots and pans if you havent unpacked yet and are quick to make if youre planning on going out with new flatmates. (Recipe serves 2).
In this series I'll be sharing simple recipes and tips on places to eat and explore around this fun city. If you're new to london and have never really cooked for yourself, hopefully these recipes will ease you into your new, independent life at UAL. But if you're no stranger to the kitchen, new recipes to add to your repetoire!
If you and your new flatmates do decide to explore London in the evening, some interesting places I'd reccomend trying are:
-Cahoots: This is a really popular new bar just off Carnaby street that is inside an old underground station. The doorman will ask you if you're hoping to board a train, say yes! He'll take you down to the 1940's underground themed bar with unusual cocktails to try while you and your new flatmates get to know each other.
-Hackney WickED: Every year around the beginning of september there is a food festival in Queens Yard, Hackney that runs into the night and has lots of different food stalls to try out. Good for trying new types of food and a low key evening.
-Over the past few years living in London, I've found that having a sense of spontinaity is what makes living here exciting. There is such a diverse mixture of things to do and see in London and there are so many areas to just wander around and find your own new favourite little places. So explore and enjoy!
2 Cod Fillets (Alternatively, Chicken or Tofu)
1tsp of Chilli Powder
1tsp of Cumin
1tsp of Paprika
1 Clove of Garlic
2tbsp of Olive Oil
1 Red Onion
4 Small Tortilla Flat Breads
1/4 of a Red Cabbage (optional)
1 Ripe Avocado (optional)
6 Cherry Tomatos (Or 1 big Tomato)
Handful of fresh Corriander (optional)
Pinch of Salt
Pinch of Pepper
-Begin by chopping the Cod (or Chicken/Tofu if you are using this instead) into medium size chunks.
-In a bowl, add the juice of one and a half limes, the Chilli powder, Paprika, Cumin, Salt, Pepper and finely chop the Garlic up and add this too to make the marinade. Stir. Then add the Cod and mix until coated in the marinade. Set this aside for cooking later on.
-Halve and finely slice the onion. If you are making the Guacamole to accompany the Tacos, save a quarter of the onion and finely dice this.
-De-seed and slice the pepper. (If you cut them quite thinly they will cook quicker). Roughly chop the coriander. (To cut fresh herbs, try rolling it into a ball and cutting). Finely slice the red cabbage if you are using this.
-Into a hot frying pan add the oil. Then add the onions, cook for a minute and then the peppers. cook these for a couple of minutes before adding the Cod. Cook the Cod until it starts to flake and browns a little. Then stir in half of the coriander. Turn the heat down to the lowest setting.
-Then you can finish preparing the guacamole if you are making this. Roughly chop the tomatoes, cut the Avocado in half, take the stone out, cut the inside of the Avocado halves horizontally and vertically (not through the skin) so that when you scoop the flesh out with a spoon you will have diced avocado. Add the Tomato's, Avocado and diced Onion that was set aside earlier and half of the remaining coriander. Squeeze into this the other half of the lime and mash everything together using the back of a fork depending on how chunky you like your guacamole.
-Fold the tortillas in half and one by one put them into a toaster for a minute or so. Or you can put them under a grill for a few minutes, being careful not to let them burn.
-Now you can plate up. Divide the Cod and Vegetable mixture between the four tortillas and garnish with the remaining Coriander. then put some of the shredded red cabbage and Avocado on the side and you are done!
