This is an easy and delicious recipe to make! Takes 40 mins in the oven and hardly any preparation! SERVES 4
4 tsp creme fraiche
4 garlic cloves, crushed
500g baby potatoes
select two vegetables- I used 200g of both carrots and green beans
2 tsp clear honey
150ml chicken stock
Heat oven to 200C/ Gas mark 6
Mix together the chicken stock, garlic and creme fraiche and season
Arrange the chicken in a roasting dish big enough for all the ingredients
Tuck the potatoes and vegetables around the chicken pieces in the dish.
Pour over the stock mixture
Drizzle with honey
Cook in the oven for 40-45 minutes
Cut a piece of chicken in half to check that it is cooked through and enjoy!
