This is a really tasty and filling recipe. It takes a while to chop the veg up though, but bear with it, it's worth it! Feeds 4.
4 Spring Onions
1 Big Pepper
1 Big Courgette
Handfull of Green Beans
4 Cloves of Garlic
2 Inches of Ginger
1 Cup of Rice
2 Chicken Breasts (Optional)
Firstly you need to make your rice, add one cup of rice with 2 cups of boiling water. Bring to the boil, then simmer for 10-12 minutes till it's cooked. Leave to cool.
Now the long bit! Chop all your veg into small 2 cm pieces aprox.
Crush your garlic, and chop your ginger very finely. In a big pan, add aprox 2tbsps of olive oil and, on a low heat, cook for a couple of minutes. (you an add chillies into it if you like too)
Add in your chopped veg (except peas) and cook until you've taken the bite off it (the peppers should have browned a bit, and the green beans should be less crunchy).
Your rice should be cool by now. Add this into the mix.
Stir it up, and add in as many frozen peas as you like! (about 3/4 of a cup i reckon).
Now, whisk your eggs in a cup with a fork, get a frying pan out and make an omelet, but keep cutting it up, so you have strips of eggy goodness. Add this to the rice.
Cut your chicken up into inch pieces, and fry in olive oil in the omelet pan till it's cooked. Add this into the rice.
Add soy sauce and pepper to taste. (You can always add more soy remember, I have gone crazy with the soy and regretted it before now!)
