Quick meal for 4. Takes about 40 mins to make.
2 red onions
2 tbsp red wine
250ml chicken or vegetable stock
4 tbsp creme fraiche
4 chicken breasts
breadcrumbs/ bread for grating
Peel and chop the red onions and potatoes. Cut the potatoes in half if they a large, to make them cook more quickly.
Either grate the bread (which is a bit time-consuming) or get out the breadcrumbs.
Crack the egg into a bowl and add a little olive oil. Dip the chicken breasts into the egg and roll them in the bread crumbs and put them on a plate. Add some mixed herbs to the chicken.
Boil the potatoes, and in a separate pan start cooking the onions (add oil to the pan first)
Add a little oil to a frying pan and start to cook the chicken. Each of the pans should take about 20 minutes to cook from now.
When the onions soften, add the stock, red wine and a few gravy granules until the mixture reaches a nice consistency.
Cook the chicken on both sides, and cut the largest piece in half to see whether it is cooked properly (white all the way through).
Stab the potatoes to see if they are soft, add the creme fraiche and mash
